Eric had to work till 7:30 and we had little interest in going out. So I tried to throw together some of the household favorites with what we had on hand-Baked chicken breasts, party potatoes, corn, and fresh-baked rolls.
Chicken Breasts
I crushed Ry Krisps and added poultry seasoning for breading. Bake at 350 degrees until no longer pink. Super Easy and it could have been easier if I could have crushed the Ry Krisps in my new food processor but it came broke-and I was so excited for my new kitchen toy!
Party Potatoes
1 bag of frozen hash browns(or O'Brien cubes)
1 Container of Sour Cream
1 Can of Cream of Chicken Soup(or Mushroom)
1 Stick of Butter, melted
2 Cups of Shredded Cheese(approx.)
Corn Flakes
Mix hash browns, sour cream, and soup. Pour into a greased 9x13 casserole dish. Cover with cheese. Sprinkle with corn flakes and then drizzle with melted butter. Bake at 350 degrees for about 1 hour.
The corn was sweet corn frozen from this summer. It was just as good as it had been in August. Thank you Kristi for sharing your husband's prized sweet corn with us! And the rolls were just frozen dough balls from the store that you let rise then bake. Yummy!
Notes:
I was running low on Sour cream so I substituted some of the sour cream in the potatoes for cream cheese then added a bit of chicken broth so it wouldn't be super thick. To my surprise it was awesome!
